Roast potatoes with garlic and parsley is one of my very favorite ways of cooking my organic potatoes. The precooking ensures that you end up with a very crispy potato and the herbs give it a delectable flavor. I also like garlic and rosemary. Just use whichever herb you have at the time – they both taste out of this world. You can eat these by themselves or have them with a salad and a serving of meat or other protein.
